Edamame Hummus


1½ cups shelled edamame beans (frozen - thawed)
½ cup olive oil
5 tbsp lemon juice
2 tbsp parsley (chopped)
1 tsp SalterieOne South Blend, plus extra for garnishing


  1. Combine all ingredients in a blender and blend until smooth.
  2. Garnish with SalterieOne South Blend.


  • Enjoy as a dip with crisps or crudites.
  • Sandwich idea: Spread a generous layer of Edamame Hummus on toasted sourdough bread and top with sliced cucumbers, tomatoes, baby spinach and Quick Pickled Vegetables
