Shrimp Po’boy
INGREDIENTS
4 pieces brioche finger roll, toasted hot dog roll, or your favorite bun
2 cups frozen popcorn shrimp
¼ cup mayonnaise
2 tsp SalterieOne South Blend
1 tsp lime juice
Small handful of microgreens or baby arugula
INSTRUCTIONS
- Prepare shrimp according to package instructions. (We like baking or frying.)
- While the shrimp cooks, combine the mayonnaise, SalterieOne South Blend and lime juice in a bowl and whisk until evenly combined.
- Once shrimp are cooked, add ½ cup of the shrimp to the roll.
- Top with a drizzle of the seasoned mayonnaise and a pinch of arugula microgreens.
- Enjoy immediately.
