Strawberry Pistachio Salad

2 cups Strawberries
1 Red onion, small
¼ cup Shelled Pistachios
¼ cup Basil leaves
2 cups Pea shoots
Lemon Vinaigrette


  1. Slice strawberries into slivers.
  2. Dice onions. 
  3. Chiffonade basil.
  4. Add berries, onions, basil, and pistachios to a medium bowl and toss to combine. 
  5. Place pea shoots on a medium platter and arrange strawberry mixture on top. 
  6. Drizzle with vinaigrette to taste.

✧  Instead of pea shoots, substitute 2 cups of arugula or mixed greens.
✧  To convert this salad into a larger meal, add a serving of grilled chicken or blackened halibut.
