Zesty Chickpea Salad (Your Anytime Go-To!)

There’s always a can of chickpeas tucked in my pantry — and for good reason. This super simple, ultra-versatile salad comes together in minutes and adds a fresh, flavorful boost to just about any meal. It’s perfect on its own, spooned over greens, or served alongside grilled anything. Bonus: it’s endlessly customizable and totally crave-worthy.

🥗 Ingredients:

  • 1 can of chickpeas, rinsed and drained

  • ½ red or white onion, finely diced

  • 1 crisp cucumber, chopped into bite-sized pieces

  • Juice of ½ a lemon (more if you're feeling zesty!)

  • 1 package of cherry tomatoes

  • 2 tbsp good olive oil

  • 2 tbsp of Old Country Greek Seasoning Salt

  • Optional but encouraged: a generous chunk of feta, crumbled

🥄 How to Make It:

  1. Grab a medium bowl and toss in your diced onion and cucumber — go for small, snackable pieces.

  2. Rinse and drain your chickpeas, then add them to the mix.

  3. Drizzle in the olive oil and fresh lemon juice, then sprinkle on your Old Country Greek Seasoning Salt.

  4. Give everything a good toss so the flavors get friendly.

  5. Taste and adjust — add more lemon, a pinch more blend, or toss in that feta for a salty, creamy bonus.

💡 Pro Tips:

  • Let the salad sit for 10–15 minutes before serving to let the flavors mingle.

  • Add a handful of arugula for extra flair.

  • Try it stuffed in a pita with hummus for an easy lunch wrap.
