There’s always a can of chickpeas tucked in my pantry — and for good reason. This super simple, ultra-versatile salad comes together in minutes and adds a fresh, flavorful boost to just about any meal. It’s perfect on its own, spooned over greens, or served alongside grilled anything. Bonus: it’s endlessly customizable and totally crave-worthy.
🥗 Ingredients:

1 can of chickpeas, rinsed and drained

½ red or white onion, finely diced

1 crisp cucumber, chopped into bite-sized pieces

Juice of ½ a lemon (more if you're feeling zesty!)

1 package of cherry tomatoes

2 tbsp good olive oil

2 tbsp of Old Country Greek Seasoning Salt
