Pomegranate Cucumber Salad

INGREDIENTS
  • 8 oz - fresh mozzarella (chopped into ¼ inch pieces)
  • 2 cups - baby cucumber (sliced into ¼ inch coins)
  • ½ cup - pomegranate seeds
  • ¼ cup - parsley (finely chopped)
  • ¼ cup - white balsamic
  • ¼ cup - olive oil
  • ½ tbsp - Duxbury Salt (wanna spice it up?! Try Fire Salt, Garlic Lover, Jalapeño Lime or Coral Heat). All it takes is a pinch!

 

INSTRUCTIONS

  1. Combine all ingredients in a bowl and toss to combine.
  2. Optional: Finish with fresh lemon juice to taste
