Pomegranate Cucumber Salad
INGREDIENTS
- 8 oz - fresh mozzarella (chopped into ¼ inch pieces)
- 2 cups - baby cucumber (sliced into ¼ inch coins)
- ½ cup - pomegranate seeds
- ¼ cup - parsley (finely chopped)
- ¼ cup - white balsamic
- ¼ cup - olive oil
- ½ tbsp - Duxbury Salt (wanna spice it up?! Try Fire Salt, Garlic Lover, Jalapeño Lime or Coral Heat). All it takes is a pinch!
INSTRUCTIONS
- Combine all ingredients in a bowl and toss to combine.
- Optional: Finish with fresh lemon juice to taste
