With a briny, intense crunch, sel gris contains a high mineral count and high flavor profile. Its gray coloring is thanks to the mineral content.
Harvested from the ocean in France using solar evaporation, the longer drying time creates a small coarse grain that retains quite a bit of moisture.
Differing from kosher grain salt (which is very dry and soaks up the flavor of your food). Sel Gris infuses flavor into food. It can be used both as a cooking salt and a finishing salt.
